Spinach Crepes

Ingredients

For pancakes:

  • 4 tablespoons of flour
  • 1 cup of milk
  • 2 eggs

For sauce:

  • Half a liter of milk
  • 1 tablespoon of flour
  • 1 tablespoon of butter
  • 1 teaspoon of salt

For spinach filling:

  • 1 onion
  • 250 gram spinach
  • 100g. cheese
  • 1 tablespoon of butter

 

  • Grated cheddar cheese

Directions:

Firstly, mix all the pancake material and get the pancake dough ready.
Then heat up the teflon pan with a little amount of butter or oil (I prefer olive-oil).
Pour in some of the dough and spread the dough inside the pan.
When both sides are cooked, take the pancake.
Make 5 pancakes like this.

For the sauce, roast the flour with butter. After that, add milk and salt.
Now, start stirring rapidly with mixer and cook until it’s thick.
When it’s thick, take the cooker off the stove.

For Internal ingredients, roast the onion with butter.
Then add the spinach and keep roasting.
After they’re cooked, take them off the stove and blend with the cheese.

Put 1 tablespoon of sauce in each of the pancakes and pour spinach over.
Close the edges and roll in. Put the rolls into a baking tray and pour the extra sauce and the grated cheddar cheese over the rolls.
Then bake until it turn golden brown in the pre-heated oven.
