Ingredients for the dough:

  • ¾ cup butter
  • ¼ cup cream cheese
  • 1 lemon zest
  • 2 cups flour
  • 1,5 tablespoons caster sugar
  • A pinch of salt
  • 1 egg yolk


Ingredients for the filling: 

  • 3-4 medium apples
  • ½ cup orange juice
  • 2 teaspoons cinnamon
  • 2-3 tablespoons granulated sugar
  • Caster sugar for its top


Whisk cream cheese, lemon zest and butter together at room temperature. Add flour, caster sugar and salt and mix well until the dough forms. Wrap dough in a cling film and rest it in the fridge for 25 minutes. Grate apples and stir them into orange juice in a mixing bowl. Add cinnamon and granulated sugar; blend well. Place the dough on a floured worktop. Cut out small pie pans sized circles. Place circles into cupcake tin and press each until all the way up each side. Put aside the extra dough for topping. Fill them up with apple filling. Create the lattice work on their tops with the remaining dough.  Overlay them with scrambled egg yolks and beat the pies for 15 minutes at 375 degrees. Pry from the cupcake tin and place them in a serving plate. Sprinkle caster sugar on top abundantly.
