  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 2 cups water
  • 6 tablespoons olive oil

  • In a large bowl, combine flour and salt. Stir in water and oil. Turn onto a floured surface; knead 12-15 times, adding a little flour or water if needed to achieve a smooth dough. Let rest for 10-15 minutes.
  • Divide dough into sixteen portions. On a lightly floured surface, roll each portion into a 7-in. circle.
  • In a large nonstick skillet coated with cooking spray, cook tortillas over medium heat for 1 minute on each side or until lightly browned. Keep warm.

This is very similar to my favorite tortilla recipe. Mine also uses 4 cups flour and 1 tsp salt but only 1 1/2 cup warm water and 2 Tbsp lard (I use coconut butter) and it also has 2 tsp baking powder. You don’t need to grease pan or spray that chemical laden non stick spray. They don’t stick at all to the pan. I am curious about stacking them before they are cooked though. Don’t they stick together when you do that?
