Chopped Egg


  • 2.oz young spring  onions
  • 8 eggs hard-boiled
  • 3 tablespoons rendered chicken fat
  • Salt and black pepper
  • Lettuce leaves to garnish

Clean spring onions trim them and chop them finely.

Using all of the White part and about half of the green.

Shell and finely chop hard-boiled eggs and mix well with chopped onions and rendered chicken fat.

Season to taste with salt and black pepper.

Chill for 2 hours.

4.Serve chooped egg on a bed of lettuce either indivual portions or mounded up on a serving dish.
