Carrot Cake


  • 4 large eggs
  • 2 cups of sugar
  • 1/2 cup of melted butter
  • 1/2 cup of olive oil
  • 3 cups of flour
  • 3 cups of finely grated carrots
  • 1 cup of chopped walnuts
  • 1 teaspoon of vanilla extract
  • 1 packet of baking powder
  • 1 pinch of salt
  • 2 teaspoons of cinnamon
  • 1 teaspoon of lemon zest

Sift flour, baking powder and vanilla for 2 times. Add flour and salt into mixture and mix. Beat the egg in mixer thoroughly. Add sugar little by little, mixing is continued. When sugar is melted add butter and olive oil. Add carrots, cinnamon and lemon zest into egg mixture and continue to stir. Recently, all materials are combined by adding flour and walnut. Cook in greased and floured cake mold in a preheated oven at 350 degrees. Dip matchstick in the middle of the cake, and check baked or not.
