Baked Zucchini


  • 4 large zucchini
  • 1/4 pound of fat feta cheese
  • 1 cup of olive oil
  • 1 cup of yogurt
  • Half a bunch of parsley
  • 1 egg
  • 1 teaspoon sumac
  • 1 tablespoon of flour
  • 1 cup milk
  • Salt
  • Black pepper

Wash zucchinis and cut the ends of them. Without peeling, split it in half vertically and remove the insides. Boil but they should be alive (or steam). Crush cheese with fork thoroughly. Mix half cup of olive oil, yogurt, finely chopped parsley, eggs and sumac perfectly. Fill mixture into zucchinis, and arrange all of them into greased baking tray. Parboil flour with half cup of olive oil. Add milk to oil while continuing to stir over lower heat. Continue stirring by adding salt and pepper. Cook by stirring until consistency becomes fine. Pour the mixture over the zucchinis. Put the tray into pre-heated oven in 400 degrees, and cook until over of zucchinis becomes brown.

Serve hot.
